Ingredients
  • one 3 1/2 to 4 lb. whole fryer
  • 4 T paprika
  • 2 T Kosher salt
  • 1 T Coarse Back pepper
  • 1T garlic powder
  • 1T onion powder
  • 1T chili powder
  • 1T cumin
  • 1 1/2 T light brown sugar
  • pinch of cinamon
  • pinch of nutmeg
  • 1t dry mustard
  • pinch ceyene to taste
  • 1 12 oz. beer

Directions
  1. combine all spices and mix well
  2. rub spice mix on the chicken inside and out
  3. refrigerate for at least 2 hours no more than 3
  4. build a nice bed of coals in your covered grill and prepare for indirect cooking
  5. take one pint mason jar and fill it half way with the beer place any leftover rub in the jar
  6. lightly coat out side of the jar with oil
  7. place chicken vertically on the jar and grill till done this can take 90 min. to 2 hours
  8. this recipe can also be done in a 350 degree oven

This sounds great. I am going to try it on the stove top using your spices, a bottle of beer with water added to cover the chicken and a little liquid smoke for the grill flavor. I'll let you know how it turn out.


Ok. I tried this, but didn't cook it on the stove top as stated above. I rubbed the chicken with liquid smoke and the seasonings. Poured a bottle of beer in a baking pan with the remainder of the seasonings. Then I placed a rack on top of the pan and put the chicken on the rack. I baked it until golden on one side and repeated with the other side. I ate 3 pieces...shame on me. It was great.


Laughed my head off at the title! Nice mix of spices though...


Great receipe - wonderful mixture of spices.as i do not have a covered grill, i shall use jamisons way of doing this. i'll probably eat at least three pieces, loving every minute of enjoyment and not being ashamed at all :-)
