Chocolate Chip Cheesecake Bars

- 1 cup butter, room temperature shopping list
- 1 cup sugar shopping list
- 1 cup brown sugar shopping list
- 2 large eggs shopping list
- 2 tbsp milk shopping list
- 2 tsp vanilla extract shopping list
- 2 cups all-purpose flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1 tsp salt shopping list
- 2 1/2 cups oats (rolled or "quick," but not "instant") shopping list
- 2 cups chocolate chips (about 12-oz.) shopping list
- 2 packages (8 oz each) cream cheese, softened shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Preheat the oven to 350°F. Line a baking sheet with parchment paper or spray the bottom of the pan.
- In a large bowl, cream together the butter and the sugars until mixture is light in color. Beat in the eggs one at a time, followed by the milk and the vanilla extract. In a medium bowl, stir together the flour, baking soda, baking powder and salt. Either by hand or with the mixer on low speed, gradually beat the flour in to the sugar mixture until just incorporated. Stir in the oats and chocolate chips by hand.
- In small bowl, beat cream cheese, sugar, 2 eggs and the vanilla with electric mixer on medium speed until smooth. Pour over cookie crust. Spoon remaining crumb mixture over cream cheese.
- Bake 25 to 30 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.
