Spice Pork Tenderloin with Maple Chipotle Sauce

- pork shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp dried thyme shopping list
- 1/4 tsp nutmeg shopping list
- 1/4 tsp cinnamon shopping list
- 1/8 tsp black pepper shopping list
- 1/8 tsp allspice shopping list
- 2 (1 lb) pork tenderloins, trimmed shopping list
- 2 tsp olive oil shopping list
- Sauce shopping list
- 1 (7 ounce) can chipotle chiles, canned in adobo sauce shopping list
- 1/2 C maple syrup shopping list
- 3 Tbl fat free, less sodium chicken broth shopping list
- 1 1/2 Tbl cider vinegar shopping list
How to make it
- Pork
- Combine first 6 ingredients; sprinkle evenly over pork
- Place in a large zip-lock bag; seal and refrigerate 3 hours
- Preheat oven to 375
- Remove pork from bag and place in a roasting pan
- Drizzle with oil
- Bake at 375 for 30 minutes or until a thermometer inserted in center reads 155
- Remove pork from pan; cover and let stand 10 minutes
- Sauce
- Remove 2 tsp adobo sauce from can of chiles
- Place remaining sauce and chiles in a zip lock bag and reserve for another use
- Add 2 tsp Adobo sauce, maple syrup, chicken broth and cider vinegar to roasting pan, scraping pan to loosen browned bits
- Cook over medium heat 5 minutes, stirring constantly
- Remove from heat
- Place pork in pan, turning to coat, remove pork, reserving sauce in pan
- Cut the pork into 1/2 thick slices
- Strain the sauce through a fine sieve into a bowl; spoon sauce over pork
