Ingredients
  • Pork
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/8 tsp black pepper
  • 1/8 tsp allspice
  • 2 (1 lb) pork tenderloins, trimmed
  • 2 tsp olive oil
  • Sauce
  • 1 (7 ounce) can chipotle chiles, canned in adobo sauce
  • 1/2 C maple syrup
  • 3 Tbl fat free, less sodium chicken broth
  • 1 1/2 Tbl cider vinegar

Directions
  1. Pork
  2. Combine first 6 ingredients; sprinkle evenly over pork
  3. Place in a large zip-lock bag; seal and refrigerate 3 hours
  4. Preheat oven to 375
  5. Remove pork from bag and place in a roasting pan
  6. Drizzle with oil
  7. Bake at 375 for 30 minutes or until a thermometer inserted in center reads 155
  8. Remove pork from pan; cover and let stand 10 minutes
  9. Sauce
  10. Remove 2 tsp adobo sauce from can of chiles
  11. Place remaining sauce and chiles in a zip lock bag and reserve for another use
  12. Add 2 tsp Adobo sauce, maple syrup, chicken broth and cider vinegar to roasting pan, scraping pan to loosen browned bits
  13. Cook over medium heat 5 minutes, stirring constantly
  14. Remove from heat
  15. Place pork in pan, turning to coat, remove pork, reserving sauce in pan
  16. Cut the pork into 1/2 thick slices
  17. Strain the sauce through a fine sieve into a bowl; spoon sauce over pork
