How to make it

  • Place pototoes in microwave and set high for 8 minutes.
  • Heat margarine/oil in large pot and saute onions on med-high to high heat til carmelized (brown).
  • Add garam masala, chili powder, turmeric, salt, pepper and approx. 1/2 can tomato paste to
  • Put back on burner, chickpeas, and just enough water to almost cover.
  • Simmer, covered, on medium or low-med heat til chickpeas are soft - about 7 minutes
  • Add the cooked potatoes (if you have time instead of microwaving you can add them in the begining with the chickpeas and cook until soft)
  • stir every so often for 2 minutes so potatoes absorb some sauce
  • Garnish with corriander
  • Serve with roti, rice pitta bread (or even buttered bread).
