Seafood Pesto

- 2 tbsp olive oil shopping list
- 3 tsp minced onion shopping list
- 1/2 cup chopped green onions shopping list
- 1 lb peeled and deveined shrimp, cut in half shopping list
- 1/2 lb scallops shopping list
- 1 cup baby portabella mushrooms, chopped shopping list
- 1 - 12 oz jar of marinated artichoke hearts (Vigo brand), drained and chopped shopping list
- 1 - 10 oz jar of basil pesto (Classico brand) shopping list
- 1 bag of fresh spinach, rinsed shopping list
- 1 box of Rigatoni, cooked al dente shopping list
How to make it
- Heat olive oil in skillet on stovetop
- sautee garlic and green onions
- add shrimp, sautee until shrimp are evenly pink
- add scallops, sautee another 2 minutes
- add baby portabellas, sautee one more minute
- add artichoke hearts
- add Basil Pesto, cook 2 minutes
- add spinach, cook another minute
- serve over Rigatoni
