I wanted chicken. I wanted stuffing. I had chicken. I decided to make stuffing.

Ingredients
  • 1/2 loaf GOOD bread (I used some homemade potato bread)
  • 1/2 c. cashews, chopped
  • 1 rib celery, chopped
  • 1 small (or 1/2 medium) onion chopped
  • 1 t. poultry seasoning
  • 1 egg
  • 1 t. coarse black pepper
  • 1/4 c. butter or margarine
  • If you are missing any of these ingredients (except the bread) skip it or substitute something else.

Directions
  1. mix it all together and put it in the crock pot
  2. top with sauteed chicken
  3. cook on low for about an hour and a half
