Like the idea of freezing the crumbs. Pinxton...buy one of the ten-dollar tiny processors; that will work for this and for crackers. Way easier than crushing!

My Gran used to collect pieces, chopped them small, then dried them on a tray in the oven at low temperature. She then used a rolling pin to crush them and stored in a jar.
    Perfect

    A variant on this -

Put ends of loaves of bread into the freezer (you weren't going to eat them anyway). When you have assembled enough, put them into the food processor, broken into pieces but still frozen. Process into crumbs. Return to freezer in a freezer ziploc.

This way you have crumbs whenever you want them.
