How to make it

  • Cut fish into 1" wide strips.
  • Put in a shallow bowl and squeeze over juice of one of the limes then toss gently.
  • Add all the other ingredients except oil and remaining lime and toss again.
  • Heat oil in a frying pan to a depth of 1/2".
  • Wait until its really hot then add fish shaking off any surplus flour.
  • Fry 2 minutes then drain well on paper towels and serve with lime wedges.
