Spicy Fried Haddock Recipe
SPICY FRIED HADDOCK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Reese Estate in Argyle, Texas in 1992.

Ingredients
  • 1 pound haddock boned and filleted
  • 2 cloves garlic finely sliced
  • 1 teaspoon ground cumin
  • 2 limes
  • 3 ounces gram flour
  • Oil for frying

Directions
  1. Cut fish into 1" wide strips.
  2. Put in a shallow bowl and squeeze over juice of one of the limes then toss gently.
  3. Add all the other ingredients except oil and remaining lime and toss again.
  4. Heat oil in a frying pan to a depth of 1/2".
  5. Wait until its really hot then add fish shaking off any surplus flour.
  6. Fry 2 minutes then drain well on paper towels and serve with lime wedges.
