Better Than Store Bought Butter Pecan Ice Cream Recipe
I came up with this recipe for my husband who loves butter pecan ice cream. I've been told several times that it's better than store bought. Lots of flavor. It's great for ice cream suppers or fellowship meals.

Ingredients
  • 1 cup Pecan Pieces
  • 5 eggs
  • 1 cup sugar
  • 1 (14 oz) can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons butter extract
  • 2 teaspoons maple extract
  • 2 cups whipping cream, whipped
  • 1-8 oz. tub of cool whip
  • 4 to 5 cups whole milk

Directions
  1. Spread Pecan Pieces on baking sheet.
  2. Roast at 300 degrees for 10 minutes, stirring occasionally; set aside.
  3. Beat eggs with sugar in large bowl.
  4. Add sweetened condensed milk, vanilla, butter, and maple extracts; beat well.
  5. Fold in whipped cream and cool whip.
  6. Fold in Pecan Pieces.
  7. Pour into a 1 gallon ice cream freezer container.
  8. Add milk to fill line.
  9. Freeze, using manufacture's instructions.
