Bruschetta Recipe
With a high Tomato crop this year I have been using tomatoes for everything BLT - BET (bacon, egg and tomato) and my fav bruschetta

Ingredients
  • 3 cups tomato (diced but not deseeded, allow juices to come to top and remove the juice you can save this for any other purpose)
  • 1/2 cup red onion (minced)
  • 3 tbsps basil (minced)
  • 1/2 cup extra virgin Olive Oil
  • 1/3 cup Balsamic Vinegar (this is one time you don't want to skimp on cost it does matter)
  • 1/2 tsp kosher salt
  • 1/4 tsp sugar

Directions
  1. Combine all ingredients and allow to sit for 12 to 24 hours serve over freshly roasted crustinie - a curl of Pecorino Romano and you have a great appie!! enjoy!
