Champagne Chicken Recipe
This is an elegant and light meal. A nice meal for two. Serve over rice and with a side salad for a wonderful light and refreshing dinner.

Ingredients
  • 1 to 1 1/2 pound chicken tenders(about 12 tenders)
  • 1 stick butter
  • 1 cup champagne
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • 1 cup heavy cream
  • 8 oz. sliced mushrooms
  • salt and pepper to taste
  • 1/3 cup flour
  • 1 teaspoon garlic powder
  • 1/3 cup sliced green onions
  • 3 tablespoons olive oil

Directions
  1. Dredge chicken tenders in flour.
  2. Season with salt,garlic powder and pepper.
  3. Fry in hot oil until lightly browned on each side.
  4. Remove and drain on paper towels.
  5. Saute garlic and mushrooms in butter until tender.
  6. Add chicken and champagne and cook for 10 minutes over medium heat..
  7. Stir in heavy whipping cream and parsley and lower heat to med/low and continue to cook 5 minutes.
  8. Season with salt and pepper.
  9. Serve over hot cooked buttered rice or buttered noodles.
