How to make it

  • Wash and dry all vegetables
  • Place peppers, tomatoes and garlic onion onto rack placed high in the oven. Roast and turn peppers so that all sides have browned and bubbled. The onions should become pretty soft and transparent.
  • Now you can leave the ingredients in the oven (turned off - while you run and collect the children from school - heck I do every time!!) or you can take the all out, put them on a plate, and cover them with another plate, or a plastic bag. They just need to steam as they cool down - this will facilitate removing the skins of the tomatoes and the peppers.
  • Next, place the roasted vegetables in a bowl and squish them all up (typically, you are meant to use a mortar and pestle, but in the privacy of my own kitchen, I use a hand-held blender - shhh!!). Add the olive oil progressively and your squish; add salt and pepper. Then sprinkle with caraway and cumin. Decoratively adorn with olives - I often add a sprig of parsley, a few slices of tomato and cuke. Drizzle a bit more olive oil on - squeez a bit of lemon on the finished product. با صحة
