How to make it

  • Place tomatoes and onions along with 1/4 cup of coarse salt in large contain and cover with ice cubes
  • Allow to sit overnight
  • Next drain well for at least 1/2 hour
  • Add 3 cups of white sugar
  • 2 cups vinegar
  • peppers
  • celery
  • mustard seed
  • and jalapeno peppers and simmer on stove for two hours with lid off
  • In separate bowl mix 3 tbsp corn starch, 3 tbsp vinegar and 1 tsp cayenne pepper
  • Add to salsa stirring constantly until desired consistency is obtained
  • Bottle and enjoy
