Homemade Salsa

- 18 ripe tomatoes (chopped with seeds removed) shopping list
- 7 large onions chopped shopping list
- 1/4 cup coarse salt shopping list
- ice cubes shopping list
- 3 cups white sugar shopping list
- 2 cups vinegar shopping list
- 1 red and 1 green pepper chopped shopping list
- 1 cup chopped celery shopping list
- 1 tbsp mustard seed shopping list
- 2 jalapeno peppers (seeds removed) shopping list
- 3 tbsp corn starch shopping list
- 3 tbsp vinegar shopping list
- 1 tsp cayenne pepper shopping list
How to make it
- Place tomatoes and onions along with 1/4 cup of coarse salt in large contain and cover with ice cubes
- Allow to sit overnight
- Next drain well for at least 1/2 hour
- Add 3 cups of white sugar
- 2 cups vinegar
- peppers
- celery
- mustard seed
- and jalapeno peppers and simmer on stove for two hours with lid off
- In separate bowl mix 3 tbsp corn starch, 3 tbsp vinegar and 1 tsp cayenne pepper
- Add to salsa stirring constantly until desired consistency is obtained
- Bottle and enjoy
