Ingredients
  • 18 ripe tomatoes (chopped with seeds removed)
  • 7 large onions chopped
  • 1/4 cup coarse salt
  • ice cubes
  • 3 cups white sugar
  • 2 cups vinegar
  • 1 red and 1 green pepper chopped
  • 1 cup chopped celery
  • 1 tbsp mustard seed
  • 2 jalapeno peppers (seeds removed)
  • 3 tbsp corn starch
  • 3 tbsp vinegar
  • 1 tsp cayenne pepper

Directions
  1. Place tomatoes and onions along with 1/4 cup of coarse salt in large contain and cover with ice cubes
  2. Allow to sit overnight
  3. Next drain well for at least 1/2 hour
  4. Add 3 cups of white sugar
  5. 2 cups vinegar
  6. peppers
  7. celery
  8. mustard seed
  9. and jalapeno peppers and simmer on stove for two hours with lid off
  10. In separate bowl mix 3 tbsp corn starch, 3 tbsp vinegar and 1 tsp cayenne pepper
  11. Add to salsa stirring constantly until desired consistency is obtained
  12. Bottle and enjoy
