APPLE BARBEQUE BRISKET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marlin Estate in Heath, Texas in 1998.

Ingredients
  • 2-1/2 pound brisket
  • 3-1/2 cups apple cider
  • 1/2 cup white wine
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup molasses
  • 1/4 cup cider vinegar
  • 2 tablespoons yellow mustard
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger root
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Preheat oven to 375.
  2. Mix wine, vinegar, cider, honey, mustard, soy sauce, molasses, garlic, salt, pepper and ginger.
  3. Pour into heavy roasting pan then add brisket and cover then place in oven.
  4. Cook 50 minutes then remove brisket from liquid and set aside.
  5. Transfer liquid to pan and cook over medium heat until reduced to a glaze and fairly thick.
  6. Heat great using apple wood then smoke brisket 1 hour.
  7. Turn meat and brush on glaze of sauce every 20 minutes.
