CAJUN PORK TENDERLOIN RIBS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 2 pounds lean pork tenderloin ribs
  • 1/2 cup vinegar
  • 2 quarts water
  • 2 tablespoons paprika
  • 1 teaspoon salt
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons red pepper
  • 1-1/2 teaspoons white pepper
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon oregano
  • 8 medium potatoes

Directions
  1. Preheat grill.
  2. Scrub potatoes and wrap in foil then place potatoes on top rack of grill.
  3. Cut ribs into serving size pieces then place into large pot and pour in vinegar.
  4. Pour enough water over ribs to cover them and set over high heat to boil until meat is cooked.
  5. Remove ribs from water and drain on paper towels to cool a bit.
  6. Combine seasonings together well and rub on all surfaces of ribs.
  7. Place ribs on covered grill over indirect heat and cook turning every 10 minutes for 30 minutes

These sound good...not sure what tenderloin ribs are tho...pork ribs, is there a difference ? Sounds good reguardless !!! :) :) :)
