Carrot Casserole Recipe
I'm not big on cooked carrots but a friend was able to entice my mother to eat this during her battle with cancer. It tastes much like sweet potatoes.

Ingredients
  • 3 cups mashed, cooked carrots (2 cans of Stokley Baby Sweet Carrots)
  • 1/2 cup sugar
  • 2 Tbsp flour
  • 1/4 tsp cinnamon
  • 2 tsp baking powder
  • 2 cup milk
  • 3 eggs, well beaten
  • 1/2 stick butter, melted

Directions
  1. Scrape carrots and cook until tender. Mash carrots with a potato masher. Mix in rest of ingredients. Pour into a greased casserole baking dish. Bake in 325 degree oven for 45 minutes or bake about 10 minutes in microwave oven.

I saw this on Suite 101. The only difference is they suggested baby carrots. Sounds good. I'll be trying it.
