Carrot Casserole Recipe

Ingredients

3 cups mashed, cooked carrots (2 cans of Stokley Baby Sweet Carrots)

1/2 cup sugar

2 Tbsp flour

1/4 tsp cinnamon

2 tsp baking powder

2 cup milk

3 eggs, well beaten

1/2 stick butter, melted

Directions

Scrape carrots and cook until tender. Mash carrots with a potato masher. Mix in rest of ingredients. Pour into a greased casserole baking dish. Bake in 325 degree oven for 45 minutes or bake about 10 minutes in microwave oven.

I saw this on Suite 101. The only difference is they suggested baby carrots. Sounds good. I'll be trying it.

I would eat this all day...my husband on the other hand...I would have to smother it in bacon and chocolate with a beer on the side to get him interested in a carrot dish!
