A great accompaniment for my chicken tajine.

Ingredients
  • bunch young CARROTS
  • 1 c ORANGE JUICE (any)
  • 1 Tsp CUMIN (powdered)
  • 1 Tsp CUMIN (grains)
  • 1/4 olive oil
  • 1 tsp DEMERERRA SUGAR (or Sugar in the Raw)
  • salt, pepper
  • flat leave PARSLEY

Directions
  1. Peel the carrots and cut them into sticks.
  2. Cover with orange juice, add sugar and the 2 types of cumin.
  3. Simmer until tender - let cool, salt and pepper to taste, add olive oil and garnish with parlsey.
