How to make it

  • Cream butter and sugar until light; add eggs one at a time then vanilla.
  • Whisk together flour, baking powder and salt; fold half into creamed mixture, then half the milk; repeat.
  • Gently fold in coconut and raspberries.
  • Spoon into lined or greased muffin tins.
  • Bake at 190C for 25-30 mins.
