Raspberry Coconut Muffins

- 125g (1/4c) soft butter shopping list
- 3/4c sugar shopping list
- 2 large eggs shopping list
- 1tsp vanilla shopping list
- 2c plain flour shopping list
- 2tsp baking powder shopping list
- 1/4tsp salt shopping list
- 1/2c milk shopping list
- 1/4c toasted dessicated coconut shopping list
- 1/2c raspberries (if using frozen do not thaw) shopping list
How to make it
- Cream butter and sugar until light; add eggs one at a time then vanilla.
- Whisk together flour, baking powder and salt; fold half into creamed mixture, then half the milk; repeat.
- Gently fold in coconut and raspberries.
- Spoon into lined or greased muffin tins.
- Bake at 190C for 25-30 mins.
