Mediterranean Style Lamb Cutlets

- 4-6 lamb cutlets shopping list
- 2 tbsp olive oil shopping list
- 2 tbsp lemon juice shopping list
- 1-2 cloves garlic, crushed shopping list
- 1 tsp dried mixed herbs shopping list
- 1 small courgette (zuchini) quartered shopping list
- 1 small aubergine (egg plant), cut ino large pieces shopping list
- 1 yellow pepper, seeded and cut into 4 pieces shopping list
- 2 tomatos, halved shopping list
- 1 small onion, peeled and quartered shopping list
- salt and black pepper shopping list
How to make it
- In a large rectangular dish mix together the marinade ingredients.
- Add the lamb and vegetables and turn to ensure well coated in the marinade.
- Cover and leave in the refrigerator for 3-4 hours.
- Arrange lamb and vegetables on the rack in the grill pan and cook under a preheated grill for 6 minutes each side.
- Serve the lamb with the vegetables, plain rice, and crusty bread.
