Mediterranean Style Lamb Cutlets Recipe
I had this dish in England, at a friend's house, and liked it so much (although lamb isn't my favourite meat!) that she gave me the recipe.

Ingredients
  • 4-6 lamb cutlets
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1-2 cloves garlic, crushed
  • 1 tsp dried mixed herbs
  • 1 small courgette (zuchini) quartered
  • 1 small aubergine (egg plant), cut ino large pieces
  • 1 yellow pepper, seeded and cut into 4 pieces
  • 2 tomatos, halved
  • 1 small onion, peeled and quartered
  • Salt and black pepper

Directions
  1. In a large rectangular dish mix together the marinade ingredients.
  2. Add the lamb and vegetables and turn to ensure well coated in the marinade.
  3. Cover and leave in the refrigerator for 3-4 hours.
  4. Arrange lamb and vegetables on the rack in the grill pan and cook under a preheated grill for 6 minutes each side.
  5. Serve the lamb with the vegetables, plain rice, and crusty bread.
