Spinach Tortellini Soup

- 1 bunch fresh spinach shopping list
- 4 large cans of chicken broth shopping list
- 9 ounces fresh cheese filled spinach tortellini shopping list
- 1 cup cooked rice shopping list
- 2 whole chicken breasts shopping list
- 1 medium red bell pepper shopping list
- 1/2 pound sliced mushrooms shopping list
- 2 teaspoons tarragon leaves shopping list
- 1/4 teaspoon ground pepper shopping list
- 1/8 teaspoon salt shopping list
- Freshly grated parmesan cheese shopping list
How to make it
- Wash and destem the spinach then chop into strips and set aside.
- Wash and deseed the pepper.
- Dice pepper and add to the spinach.
- Skin chicken breast and cut into strips.
- Bring broth to boil in a covered pan.
- Add tortellini to broth and boil gently uncovered 8 minutes.
- Add all vegetables, chicken and seasonings then bring to boil over high heat.
- Reduce heat to simmering then cover and cook until chicken is no longer pick in the middle.
