Smoked Salmon Cakes

- 3 tablespoons butter shopping list
- 1/2 cup minced onion shopping list
- 1 clove garlic, minced shopping list
- 3 cups diced potatoes shopping list
- 1/2 teaspoon salt shopping list
- 1/3 pound smoked salmon, flaked into pieces shopping list
- 1 egg, beaten shopping list
- 1 tablespoon lemon juice shopping list
- Dash of hot pepper sauce shopping list
- 3 tablespoons snipped chives shopping list
- lemon wedges shopping list
- 4 tablespoons vegetable oil shopping list
How to make it
- Melt the butter in a small skillet. Add onions and garlic and cook, stirring frequently, until golden brown, about 5-6 minutes. Set aside.
- Place potatoes in a pan with the salt and cover with boiling water. Cook over medium heat until soft. Drain the potatoes and place in a mixing bowl.
- Add the smoked salmon to the potatoes and mash together with a potato masher. Beat in the sauteed onions and egg. Add the lemon juice, hot pepper sauce and chives. Mix well and form into patties.
- Heat oil in a large skillet. Brown cakes on both sides, about 2 1/2 minutes per side. Drain on paper towels. Serve with lemon wedges.
