Ingredients
  • 3 tablespoons butter
  • 1/2 cup minced onion
  • 1 clove garlic, minced
  • 3 cups diced potatoes
  • 1/2 teaspoon salt
  • 1/3 pound smoked salmon, flaked into pieces
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • Dash of hot pepper sauce
  • 3 tablespoons snipped chives
  • Lemon wedges
  • 4 tablespoons vegetable oil

Directions
  1. Melt the butter in a small skillet. Add onions and garlic and cook, stirring frequently, until golden brown, about 5-6 minutes. Set aside.
  2. Place potatoes in a pan with the salt and cover with boiling water. Cook over medium heat until soft. Drain the potatoes and place in a mixing bowl.
  3. Add the smoked salmon to the potatoes and mash together with a potato masher. Beat in the sauteed onions and egg. Add the lemon juice, hot pepper sauce and chives. Mix well and form into patties.
  4. Heat oil in a large skillet. Brown cakes on both sides, about 2 1/2 minutes per side. Drain on paper towels. Serve with lemon wedges.
