How to make it

  • Lightly toast the almonds in a dry pan and set aside.
  • Heat up stock and add olive oil.
  • Place onion and couscous in a medium mixing bowl and add heated stock.
  • Stir gently, then cover bowl tightly with plastic wrap.
  • Leave for 5 minutes.
  • Once couscous has absorbed the stock, lightly fluff with a fork.
  • Sprinkle with almonds and season to taste with salt and pepper.
