This is a great salad to go with cold chicken or turkey. If you serve it warm, it is wonderful with grilled meats, or just a nice piece of crusty bread

Ingredients
  • 2 red peppers
  • 1 yellow pepper
  • 1 orange pepper
  • ***
  • 1/2 small red chilli
  • 1/2 small green chilli
  • 1 tsp grated ginger, fresh
  • small bunch of spring onions
  • 4 tbsp soy sauce
  • 4 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • 2 tbsp clear honey

Directions
  1. Preheat the grill to hot.
  2. Cut the peppers in half.
  3. Place cut-side down on the grill rack and grill for 10-15 minutes or until the skins blaken and blister all over.
  4. Cover with a clean damp tea-towel and leave to cool.
  5. ***
  6. Halve, deseed and finely chop the chillies (wear rubber gloves).
  7. Trim and slice the spring onions diagonally and place all the dressing ingredients in a bowl.
  8. Mix well until thoroughly combined.
  9. Remove the skins and seeds from the peppers, then cut into thick slices.
  10. Spoon the dressing over the peppers and serve.
