Hot Mango and Banana Salad

- 2 large oranges shopping list
- 2 firm but ripe mangoes shopping list
- 4 small bananas shopping list
- 25 grs low-fat spread shopping list
- 2 tsp light soft brown sugar shopping list
- 2 tbsp Malibu or rhum shopping list
- 2 tbsp lemon or lime juice. shopping list
How to make it
- Thinly pare the rind of one orange and squeeze the juice.
- Cut the pared rind into very thin strips and blanch in boiling water for 1 minute to soften.
- Set the rind and juice aside.
- Peel the other orange and slice across.
- Peel the mangoes and slice the flesh either side of the stone.
- Cut all the flesh into bite-sized pieces.
- Peel and slice the bananas, not too thin.
- Melt the low-fat spread in a large non-stick frying pan. Add the sugar and fruits and sauté for 2-3 minutes or until they just begin to soften.
- Pour in the Malibu or rhum, lemon or lime juice and the reserved orange juice.
- Add the orange slices and bring to the boil.
- serve immediately decorated with the reserved orange rind.
