How to make it

  • Thinly pare the rind of one orange and squeeze the juice.
  • Cut the pared rind into very thin strips and blanch in boiling water for 1 minute to soften.
  • Set the rind and juice aside.
  • Peel the other orange and slice across.
  • Peel the mangoes and slice the flesh either side of the stone.
  • Cut all the flesh into bite-sized pieces.
  • Peel and slice the bananas, not too thin.
  • Melt the low-fat spread in a large non-stick frying pan. Add the sugar and fruits and sauté for 2-3 minutes or until they just begin to soften.
  • Pour in the Malibu or rhum, lemon or lime juice and the reserved orange juice.
  • Add the orange slices and bring to the boil.
  • serve immediately decorated with the reserved orange rind.
