Make this all the time for me and Hubby. We even have a little left-overs for a lunch.

Ingredients
  • 4 no boil lasagna noodles
  • 1/2 jar of you favorite sauce
  • 1 egg lighty beaten
  • 1/2 cup cottage cheese
  • 1/2 cup freshly grated parma
  • 1 c. mozzerlla grated
  • about 20 slices pepperon
  • 1/3 lb. hamburger

Directions
  1. brown meat and add to sauce
  2. spoon enough sauce in bottom of loaf pan to cover bottom
  3. mix cottage cheese,parma, egg and mozzerlla togeather
  4. place lasagna noodle in bottom of pan
  5. spoon some of the cheese mixture over
  6. place some of the pepperoni on top of mixture
  7. add more sauce
  8. repeat layers
  9. top with extra cheese if you want
  10. bake covered at 350 for 1/2 and hour
  11. uncover and bake for at least 15 min. more
  12. remove from oven and let set 20 min. before serving. YUMMY

This is great! So far, it's just me and my husband at home. I came from a family of six, and him from a family of nine, so I always seem to cook a lot more food than we really need or will eat. I love scaled-down recipes of classics, and if lasagna isn't classic, I don't know what is! Thanks!
