Baked Apples With A Hint Of Christmas Recipe

Baked Apples With A Hint Of Christmas Recipe
Baked apples are very traditional all over Portugal, but I find them too bland. So, one day I decided to "embelish" them....

Ingredients
  • 4 large apples (I ise golden delicious)
  • 2 tbsp raisins
  • 1 tbsp butter
  • 2 tbsp soft brown sugar
  • 2 tsp cinnamon
  • 2 tbsp Port (or any dessert wine, although it won't be the same)
  • 1 cup water

Directions
  1. Core the apples.
  2. Cut just the skin around the apples.
  3. Stand them in a baking dish.
  4. Work the butter with the sugar and cinnamon.
  5. When well blended, add the Port mixing well so that it is all absorbed.
  6. Add the raisins.
  7. Stuff the apples.
  8. Pour 1 cup water in the dish.
  9. Bake in a pre-heated oven (moderate) for about 30 minutes.
  10. The butter mixture will permeate the apples and melt into the water producing a lovely sauce.
  11. The apples will puff up as they bake, and look most uninviting - don't be fooled!
  12. If you want, serve with a dollop of whipped cream.
