Better than Moms Pinapple upside down cake

- 3/4 cup whole milk shopping list
- 1 cup course ground cornmeal ( polenta ) shopping list
- 4 ounces butter shopping list
- 8 ounces dark brown sugar ( light will work ) 1 cup shopping list
- 6 slices of pinapple shopping list
- 6 maraschino cherries shopping list
- 1/3 cup chopped pecans, toasted. opt. shopping list
- 3 tbls. pinapple juice fron the can shopping list
- 3 whole eggs shopping list
- 4 3/4 ounces all-purpose flour, about a cup shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 5 3/4 ounces sugar, about 3/4 cup shopping list
- 1/2 canola oil shopping list
How to make it
- preheat oven to 350
- Boil milk, remove from heat, add corn meal. Stir and let soak for 30 min. at room temp.
- Melt butter in a 10 inch cast iron skillet over med. heat. Once butter has melted add brown sugar and stil until it has dissolves, about 5 min. Carefully add pinapple in center of pan, place the rest around.Place cherries in center of pinapple.Drizzle pinapple juice over top.
- Sift flour, baking powder and salt into a med. bowl.
- In separate bowl, wisk the eggs. Add the sugar to eggs and whisk to combine. Add canola oil and whisk. Add cornmeal and milk mixture to egg mixture, whisk to combine.Add this to the flour and stir just until combined. Pour batter over the furit in skillet and bake for 40 to 45 min. Remove from oven and let cool for 1/2 hour in skillet. Set platter on top and carefully invert the cake. Serve
