Better Than Moms Pinapple Upside Down Cake Recipe
A little different twist the normal pineapple unside down cake, really yunny

Ingredients
  • 3/4 cup whole milk
  • 1 cup course ground cornmeal ( polenta )
  • 4 ounces butter
  • 8 ounces dark brown sugar ( light will work ) 1 cup
  • 6 slices of pinapple
  • 6 maraschino cherries
  • 1/3 cup chopped pecans, toasted. opt.
  • 3 tbls. pinapple juice fron the can
  • 3 whole eggs
  • 4 3/4 ounces all-purpose flour, about a cup
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 5 3/4 ounces sugar, about 3/4 cup
  • 1/2 canola oil

Directions
  1. preheat oven to 350
  2. Boil milk, remove from heat, add corn meal. Stir and let soak for 30 min. at room temp.
  3. Melt butter in a 10 inch cast iron skillet over med. heat. Once butter has melted add brown sugar and stil until it has dissolves, about 5 min. Carefully add pinapple in center of pan, place the rest around.Place cherries in center of pinapple.Drizzle pinapple juice over top.
  4. Sift flour, baking powder and salt into a med. bowl.
  5. In separate bowl, wisk the eggs. Add the sugar to eggs and whisk to combine. Add canola oil and whisk. Add cornmeal and milk mixture to egg mixture, whisk to combine.Add this to the flour and stir just until combined. Pour batter over the furit in skillet and bake for 40 to 45 min. Remove from oven and let cool for 1/2 hour in skillet. Set platter on top and carefully invert the cake. Serve
