How to make it

  • Cook tortellini according to package directions. Drain and rinse with cold water; set aside.
  • In a large glass bowl (I suggest a trifle bowl or any clear glass bowl with straight sides), layer cabbage, spinach, tortellini, tomatoes and onions.
  • Pour dressing over top; sprinkle with bacon if desired. Cover and refrigerate for at least one hour.

    I made this again the other night, and remembered the last time I made it that I thought it needed more tortellini. I edited the recipe tonight to include double the tortellini I called for originally. - Nat
