Expresso Walnut Loaf

- 225 g self raising flour with pinch of salt , sifted shopping list
- 225 g lite muscavado sugar , sifted shopping list
- 225ml groundnut oil shopping list
- 4 medium yolks shopping list
- 50 ml strong coffee shopping list
- 50 ml thick milk . shopping list
- 4 medium egg whites whisked stiff shopping list
- 75 gm chopped walnuts . shopping list
- ................... shopping list
- Filling : Expresso cream - blend everything together with a spoon .. shopping list
- 250 gm cream cheese shopping list
- icing sugar to taste shopping list
- 1 tbsp or more - strong coffee depends on your liking shopping list
- ..................... shopping list
- icing : Mix everything together with a fork .. shopping list
- 100 g icing sugar , sifted shopping list
- 1 tbsp or more strong coffee depends on your liking shopping list
- ......... shopping list
- Whole walnuts to decorate shopping list
How to make it
- Pre heat the oven at 190 deg C .
- Butter and line a loaf tin .
- Beat the yolks in a wide bowl .
- Add the flour , sugar , oil , Expresso ( milk and the coffee )
- Fold the egg whites in along with the walnuits .
- Bake for 40 mins .
- ............
- Cut the cake into layers and do the filling - 1 1/2 to 2 tbsp in each layer .
- ....................
- Drizzle the icing on top and place the walnuts .
- Chill for 30 mins to set .
