Any combination of tomatoes works in this attractive salad. Olive pate is available in tubes or jars with the condiments or in the ethnic section. No cook time just arranging time.

Ingredients
  • Vinaigrette
  • 3 Tbl balsamic vinegar
  • 2 Tbl water
  • 1 Tbl EVOO
  • 1Tbl
  • olive pate
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 garlic clove, crushed
  • Salad
  • 6 C mixed salad greens
  • 1/2 C chopped red onion
  • 1/4 C chopped fresh basil
  • 12 (1/4 " thick green) green, yellow and red tomato slices, halved

Directions
  1. Vinaigrette
  2. combine first 7 ingredients in a small bowl and whisk until well combined
  3. Salad
  4. Place greens on a platter
  5. Sprinkle half of the onion and basil over greens
  6. Arrange tomato slice halves over basil
  7. Top with remaining onion and basil
  8. Drizzle evenly with vinaigrette
