How to make it

  • In a large bowl, combine all dry ingredients except 1 tablespoon of oats
  • In another bowl combine applesauce, egg, and vanilla
  • stir into dry ingredients just until moistened
  • Fold in raisins and pecans
  • Pour into a greased 8inx4inx2in loaf pan
  • Sprinkle with remaining oats
  • Bake at 325 degrees for 50min to 1 hour or until a toothpick inserted near the center comes out clean
  • Cool for 10 minutes before removing from pan to wire rack.

    Sometimes whole wheat flour makes bread drier than all purpose. You might try substituting half the flour with whole wheat and see how that tastes. If it's still really moist maybe try all whole wheat the next time.

    Sounds yummy! Do you think I could substitute whole wheat flour for all of the white flour or would that not turn out so good? We go through bread so fast so I would love to make some of our own. If not, I think I still will give it a try. It sounds delicious. Thanks for sharing :-)
