Carrot Walnut Bread

- CAKE: shopping list
- 1 c. vegetable oil shopping list
- 3/4 c. sugar shopping list
- 2 eggs shopping list
- 1 t. vanilla shopping list
- 1 1/2 c. flour shopping list
- 1 1/2 t. baking soda shopping list
- 1 1/2 t. cinnamon shopping list
- 1/2 t. salt shopping list
- 1 1/2 c. grated carrot (3 large) shopping list
- 1 1/2 c. ground walnuts shopping list
- lemon GLAZE: shopping list
- 1/2 c. powdered sugar shopping list
- 1 t. grated lemon rind shopping list
- 1 T. lemon juice (fresh is best) shopping list
How to make it
- CAKE:
- grease loaf pan, dust lightly with flour, tap out excess.
- Combine oil, sugar, eggs and vanilla in large bowl;
- Sift flour, baking soda, cinnamon and salt onto wax paper, add to sugar mixture;
- Stir in carrots & nuts; mix JUST until blended;
- Turn into prepared pan.
- Bake at 350 for 1 hour or until center springs back when pressed.
- Cool in pan.
- When cool, poke holes in cake with a fork and also slide a knife or spatula around edges to get the cake away from the side of the pan.
- Drizzle glaze evenly over, making sure it gets down the sides too.
- GLAZE:
- Combine first 3 glaze ingredients;
- Add vanilla and stir well.
