How to make it

  • CAKE:
  • grease loaf pan, dust lightly with flour, tap out excess.
  • Combine oil, sugar, eggs and vanilla in large bowl;
  • Sift flour, baking soda, cinnamon and salt onto wax paper, add to sugar mixture;
  • Stir in carrots & nuts; mix JUST until blended;
  • Turn into prepared pan.
  • Bake at 350 for 1 hour or until center springs back when pressed.
  • Cool in pan.
  • When cool, poke holes in cake with a fork and also slide a knife or spatula around edges to get the cake away from the side of the pan.
  • Drizzle glaze evenly over, making sure it gets down the sides too.
  • GLAZE:
  • Combine first 3 glaze ingredients;
  • Add vanilla and stir well.
