Ingredients
  • 4 oz blue cheese, any kind crumbled
  • 4 scallions chopped ( white and green parts )
  • 1 Tbs brandy or Cognac
  • 4, club steaks, 1 inch thick
  • pepper to tase

Directions
  1. Crumble blue cheese with scallions, brandy and pepper
  2. Briol steaks 4 inches from heat. for 6 minutes.
  3. Flip steaks over and spread with cheese mixture and broil another 6 minutes for medium rare
  4. Serve immediately
