Easy way to preserve lemons and can them, . Great for gift giving or once opened lasts a year in rhe refrigerator. Great to serve over any grilled food or a garnish for salads or vegetarian delights

Ingredients
  • 9 whole lemons
  • kosher salt ( softenes the rind and mellows the bitterness of the lemons )
  • dried spices : thyme, saffron, red chilies, bay leaves,
  • green peppercorns- add as desired

Directions
  1. Boil 6 whole lemons for 5 minutes and drain and cool
  2. Cut each lemon in half, toss with 1/2 cup kosher salt and pack into jars
  3. Cover with the juice of 3 more lemons and add enough boiling water to fully submerge lemons in jars.
  4. Store at least one week room temperature before using.
  5. Zip up flavor by adding spices to the jar.
  6. Once the jar is opened, they will last up to a jar in the refrigerator
