Wine Biscuits Recipe
These crisp and peppery crackers are made from a refrigerated slice-and-bake dough. They're an equally fine accompaniment to a glass of wine or a cup of soup.

  • 1 cup dry vermouth
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • Freshly ground black pepper
  • 1/2 teaspoon salt
  • 1/2 cup butter (no substitutions), softened
  • 1/4 cup vegetable shortening
  • 1/2 cup sugar
  • 1 large egg white, beaten with 1 tablespoon water

Directions
  1. Bring wine to boil in small saucepan over high heat.
  2. Cook until reduced to 1/4 cup, 8 to 10 minutes
  3. Cool to room temperature.
  4. Meanwhile, combine flour, baking powder,
  5. 3/4 teaspoon of the pepper and the salt in medium bowl.
  6. Beat butter, shortening and sugar in mixer bowl until light
  7. and fluffy.
  8. Blend in cooled wine. Add dry ingredients;
  9. beat 1 minute. (Dough will be sticky.)
  10. Divide dough. Spoon each half onto a sheet of plastic wrap; shape each
  11. into 10x1-inch log. Wrap and freeze overnight.
  12. Heat oven to 350 degrees F.
  13. Cut frozen logs into 1/4-inch-thick slices and place on ungreased cookie
  14. sheets
  15. Brush tops of dough with beaten egg white mixture.
  16. Grind additional pepper on top.
  17. Bake 12 minutes or until
  18. edges are golden, switching position of cookie sheets
  19. halfway through baking.
  20. Cool completely on cookie sheets.
  21. Store at room temperature up to 1 month.

Umm I don't get it..These sound great.. but I don't see the Wine in the ingredients, or the Refrigerated Dough. Am I missing something?

Vermouth is a fortified white wine. I just used Julia Child's Substion to avoid ines that may be too acidic.
