PUFFED CHICKEN WINGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gee Estate in Quinlan, Texas in 1994.

Ingredients
  • 12 chicken wings
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger root minced
  • 1/2 cup dry sherry
  • 2 tablespoons sesame oil
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1 egg lightly beaten
  • 1/2 cup milk

Directions
  1. Combine garlic, ginger, sherry and sesame then add wings to marinade for 1 hour.
  2. Combine cornstarch, flour and baking powder then stir in egg and milk.
  3. Pat wings dry then dip in batter and drip off excess.
  4. Heat oil to 350 then fry wings a few at a time for 4 minutes.
