Spanish Tortilla

- 2 tsp olive oil shopping list
- 2 onions, finely chopped shopping list
- 1 garlic clove, minced shopping list
- 2 medium cooked, diced potatoes shopping list
- 1 (10 ounce) package chopped spinach, thawed, and squeezed dry shopping list
- 1 C egg substitute shopping list
- 2 Tbl finely chopped parsley shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp freshly ground pepper shopping list
- 1/4 tsp thyme shopping list
- 1/8 tsp ground nutmeg shopping list
How to make it
- In a large nonstick skillet, heat the oil and saute the onions until golden, about 7 minutes
- Add the garlic; cook, stirring 1 minute longer
- Stir in the potatoes, spinach and egg substitute, parsley, salt pepper, thyme and nutmeg
- Reduce heat to medium low and cook covered until set and browned on bottom, about 10 minutes
- Loosen edges with knife and invert onto a warm platter or serve directly from skillet
