How to make it

  • In a large nonstick skillet, heat the oil and saute the onions until golden, about 7 minutes
  • Add the garlic; cook, stirring 1 minute longer
  • Stir in the potatoes, spinach and egg substitute, parsley, salt pepper, thyme and nutmeg
  • Reduce heat to medium low and cook covered until set and browned on bottom, about 10 minutes
  • Loosen edges with knife and invert onto a warm platter or serve directly from skillet

    Another great recipe and story. I love all the ingredients but I am going to use real eggs. I am a huge believer that in any eating regimen, eggs are a very vital and important part of the diet. "Everything in Moderation". Thanks again Pat. Easy and economical.
