Ingredients
  • 3 cups cooked onions
  • 2 cups oyster crackers
  • 1/2 cup buttered crumbs
  • 3/4 cup sweet milk
  • 2 eggs
  • 3 tablespoons butter
  • salt and pepper to taste

Directions
  1. Slice or quarter onions.
  2. Boil until done.
  3. Into a baking dish put a layer of onions, butter, salt, and pepper.
  4. A layer of broken crackers, more onions and crackers, until all are used.
  5. Heat milk just to lukewarm.
  6. Mix milk and eggs together; pour over the mixture then cover top with buttered crumbs.
  7. Bake at 325° just long enough to set the milk and eggs and brown top, about 30 to 40 minutes.
  8. Serve from the dish in which it was baked.

I made this tonight -- it was fantastic! i didn't boil the onions first though. partly because i was lazy, but mostly because i didn't want to boil away the onion flavour. i love strong, intense onion flavours, and thought boiling might take part of that away. But yah... other than that, i followed the recipe as stated and really enjoyed it. :)
