THE 1 Cupper Recipe
Just when you think you have nothing to satisfy that sweet tooth... This is great because most people have these few things already in the pantry!! Bakes up beautifully!!

Ingredients
  • 1 cup sugar
  • 1 cup self rising flour
  • 1 cup milk
  • 1 cup butter
  • fruit of your choice

Directions
  1. preheat oven to 350
  2. melt butter in 13x9 dish in oven
  3. meanwhile, mix together sugar, flour, and milk until smooth
  4. remove butter from oven and pour batter over top
  5. place fruit on top
  6. bake for about 40 minutes until golden
  7. **if using can fruit, drain first**
  8. ***if using fresh fruit, sweeten first: about 1/4 cup sugar***
  9. **batter will bake up around fruit. if you want you can brush a little melted butter on top after baking and sprinkle with a little sugar and cinnamon...especially well with peaches**

I've used a similar recipe for years. It's always a hit! We call it "lazy man's cobbler".

This is a long time favorite in my family! My daddy used biscuit mix instead of self-rising flour. He had a certain glass bowl that he would fill with fruit and then he knew he had the right amount for his recipe! I have one in the oven right now with canned peaches with brown sugar and cinnamon sprinkled over them.

Alterations


Ok...I Love this recipe...A LOT!
Here's my alteration...
make recipe as usual;
add about 3oz cream cheese - cut up into small bites...about 1/4 - 1/2 cup sliced almonds... and a splash of vanilla extract.
bake according to original recipe.
I thought this was delicious and I hope you do too!

An edit to the above...
I only used 2 or 3 TBS of butter. Melted in the pan in the oven, then the rest of the recipe as above. :)


Another version:
add a tsp of almond extract. a few dollops of marshmallow fluff and top with sliced almonds...WOW!
