How to make it

  • Cut stems off all peppers.
  • Cut pepper down the middle long way.
  • Use a spoon to remove all seeds,etc from the inside of the peppers.
  • Brown sausage and drain.
  • Preheat oven to 350.
  • Cut up neufchatel cheese into little blocks and melt into the sausage until well blended.
  • Using a spoon fill each of the peppers (should look like little boats) with the sausage mixture.
  • Place on greased cookie sheet and sprinkle with parmesan cheese.
  • Bake for 30 minutes or until peppers are soft and top is lightly browned.
