Fresh Herb Penne with Chicken and Tomatoes

- 16 oz. (1 package) penne rigate shopping list
- 4 tbsp extra virgin olive oil shopping list
- 1 tsp. fresh chopped garlic** shopping list
- 1 can (14.5 oz.) diced tomatoes shopping list
- 1/3 cup fresh basil leaves, chopped or cut into thin strips** shopping list
- 1 package (10-12 oz.) cooked chicken breast strips shopping list
- 1 1/2 cups (6 oz.) shredded mozzarella cheese shopping list
- salt and cracked black pepper to taste shopping list
- **May substitue dry equivalents: shopping list
- 1/8 tsp. garlic powder shopping list
- 1 1/2 tsp. dry basil shopping list
How to make it
- Cook and drain Penne Rigate according to package directions
- Heat olive oil in large skillet over medium-high heat
- Add garlic and cook for 1 minute
- Add tomatoes and basil; cook 2 minutes
- Add chicken; simmer for 5 minutes
- Toss with pasta and mozzarella cheese
- Season to taste with salt and cracked black pepper
- Serve immediately
