Pasta Beans And Greens Recipe
The garlic and red pepper really make this dish. It's easy to prepare, simple, and healthy.

Ingredients
  • 2 bunches kale or swiss chard
  • 2 Tablespoons olive oil
  • 6 cloves garlic
  • 1 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 2 15 ounce cans great northern beans
  • 7 ounces chicken broth (more if necessary)
  • 12 ounces penne pasta
  • Parmesan (lots!)

Directions
  1. Wash and dry greens, strip the leaves from the stems, and coarsely chop.
  2. Finely mince garlic.
  3. Drain and rinse beans.
  4. In a large pan, heat olive oil on medium heat. Add garlic and red pepper and cook until garlic is golden in color.
  5. Add the greens, beans and chicken broth. Cover and cook on medium heat.
  6. Check after 5 minutes to see if it's still wet- if not, add more chicken broth so it doesn't scorch. Cover and cook until greens are soft (about 20 minutes). Most of the liquid will be absorbed by the cooking.
  7. Cook penne according to package directions.
  8. Combine penne with greens and serve. Sprinkle on lots of parmesan and enjoy.

Beans and greens happens to be be a fovorite of my wife. adding the penne takes it from a good side dish to a great entree. thanks
