Rice -filled Baked Tomatoes Recipe

This is really tasty, especially if you are a fan of the good old tomato. Doesn't take long to do either.

  • 8 large ripe tomatoes
  • 250g packet of rice (tomato flavor if desired)
  • 200g shaved leg ham, finely chopped
  • 1 courgette, grated
  • 2 tsp finely grated lemon rind
  • Salt and pepper, to taste
  • 1/2 cup grated mozzarella cheese
  • Green salad and crusty bread, to serve

Directions
  1. 1 Cut a thick slice from the tops of tomatoes then a small slice from the base so they sit flat. Scoop out flesh and seeds, leaving a 1cm-thick shell. Turn tomatoes upside down to drain on absorbent paper while preparing rice filling.
  2. 2 Cook rice according to packet directions. Transfer to a medium bowl. Add ham, courgette and lemon rind. Season with salt and pepper. Mix well. Divide rice mixture among tomatoes.
  3. 3 Place tomatoes on large oven tray lined with baking paper. Sprinkle tops with cheese.
  4. 4 Cook in a hot oven (200°C) for 15 minutes, or until tomatoes are soft and cheese is browned.
  5. 5 Serve with a green salad and crusty bread.
  6. tip:Reserve the tomato flesh to add to pasta dishes or soups, or freeze and add to casseroles and sauces.
