This is so delicious. I have used it for dinner or served for Mexican theme parties. Also good if you use some roasted chicken in there. I don;t remember where I got this recipe but it is really good!

Ingredients
  • 1 15 -oz can red kidney beans, drained, rinsed
  • 1 tsp chili powder
  • 1/4 tsp each cumin and salt
  • 2 1/2 cups shredded pepper Jack cheese
  • 1 10- oz can hot enchilada sauce
  • 1 10 -oz can mild enchilada sauce
  • 8 flour tortillas

Directions
  1. Heat oven to 375 degrees.
  2. Mix beans, chili powder, cumin and salt in bowl.
  3. Slightly mash beans, stir to combine.
  4. Add 1 1/2 cups cheese.
  5. Mix 2 cans enchilada sauce in bowl.
  6. Stir 1 cup into bean mixture.
  7. Spread 1/4 cup sauce mixture in baking dish.
  8. Brush one side of tortilla with sauce.
  9. Spoon 1/4 cup bean mixture in center on sauced side, roll up, place seam side down in dish.
  10. Repeat with remaining tortillas and bean mixture.
  11. Pour remaining enchilada sauce over top to cover.
  12. Top with remaining cheese.
  13. Bake 15 min.
  14. SERVE WITH SOUR CREAM OR SALSA. Makes 8 enchiladas.
  15. I add a jar of hot or medium picante sacue to this to give it more sauce and kick.
