Mexican Corn Bread With Sausage Recipe
This is an easy main dish. There are a lot of mexican corn bread recipes out there, but we make ours with sausage.

Ingredients
  • 1 lb smoked turkey sausage (or regular smoked sausage)
  • 1 large onion
  • 2 eggs
  • 1 cup milk
  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 16 ounce can cream corn
  • 3 jalapenos
  • 2 cups grated cheddar

Directions
  1. Finely chop the onion, sausage, and jalapenos
  2. Cook sausage and onion on high heat until the onion is cooked. Drain off excess fat.
  3. Spray a 9x13 pan with nonstick spray and preheat oven to 350 degrees.
  4. In a mixing bowl, lightly beat the eggs and then add milk, corn meal, salt, baking soda, creamed corn, and jalapenos. Mix together with sausage and onions.
  5. Pour into the 9x13 pan and layer cheese on top.
  6. Bake 35 minutes at 350 degrees.
