Red Velvet Cake with a Difference

- cake shopping list
- 100g butter shopping list
- 350g sugar shopping list
- 2 eggs shopping list
- 30g cocoa shopping list
- 30ml boiling water shopping list
- 2 bottles (30ml each) red food colouring shopping list
- 250g flour shopping list
- 5ml salt shopping list
- 250ml buttermilk shopping list
- 5ml baking soda shopping list
- 5ml white vinegar shopping list
- frosting shopping list
- 250ml milk shopping list
- 45g flour shopping list
- 220g sugar shopping list
- 230g butter shopping list
- 5ml vanilla essence shopping list
- chocolate vermicelli to sprinkle shopping list
How to make it
- Pre-heat the oven to 180C
- Prepare two cake tins (20cm)
- Cake
- Cream the butter and the sugar until light and creamy
- Add the eggs one by one, mix well after each
- Mix the cocoa, boiling water and food colouring to form a thick paste
- Add this to the butter mixture and blend
- Sift flour and salt together - keep seperate
- Mix buttermilk and vanilla essence - keep seperate
- Now add the flour mixture and the buttermilk mixture alternately, untill blended well
- Lastly mix the baking soda and the vinegar and add to the cake mixture.
- Divide the mixture into the two baking tins
- Bake for 30 minutes (or until cake tester comes out clean)
- Frosting
- Add a little of the milk to the flour and mix to a smooth paste
- Add the sugar to the rest of the milk and bring to boil, stirring frequently
- Cream the butter until light and soft
- Add the vanilla essence to the butter cream and blend well
- Add the milk mixture to the Butter mix and beat untill it has a light and fluffy texture. (like whipped cream)
- Let cake and frosting cool down
- Spread some of the frosting on the first layer, add the second layer and 'frost' the cake right round.
- Sprinkle with Chocolate Vermicilli (or I sometimes crumble Cadburys Flake over the top)

This is almost like mine that I got from New Orleans an my Aunt... Even the frosting. I posted the frosting on here.. We use it on all types of cake.. Recipe is an old one.. It was called "Icing" back then...
