Banoffi Pie

- Base shopping list
- 125g butter shopping list
- 250g digestive biscuits, crushed shopping list
- Filling shopping list
- 175g butter shopping list
- 175g caster sugar shopping list
- 425g Can condensed milk shopping list
- Topping shopping list
- 2 bananas shopping list
- 1 Tablespoon lemon juice shopping list
- 150ml whipping cream shopping list
- 25g Dark chocolate shavings shopping list
How to make it
- Base
- Melt the Butter in as saucepan and stir in the biscuit crumbs.
- Press the biscuit mixture evenly over the base and sides of a deep 20cm round flan tin.
- Chill until firm.
- Filling
- Put the butter and the sugar in a saucepan and heat gently.
- Once the butter has melted, stir gently.
- Stir in the condensed milk and bring slowly to the boil.
- Lower the heat and simmer for 5 minutes, stirring until the mixture becomes a caramel colour.
- Pour the filling over the prepared biscuit base and leave to cool, then chill until the mixture has set.
- Topping
- Slice the bananas and toss them in the lemon juice. Reserve a quarter of the bananas for decoration and spread the rest over the filling.
- Whip the cream until thick and spread over the top.
- Serve decorated with the reserved banana slices and sprinkle with chocolate shavings.
- (some people do not like the banana slices. So sometimes I puree the bananas and lemon juice and stir it into the filling mixture just before pouring it over base, then top with cream and chocolate)
