Poached Seafood Italiano Recipe
I like this Salmon a lot! It's easy to do and has a great flavor! And it's low carb!

Ingredients
  • 1 tablespoon olive oil
  • 1 clove minced garlic
  • 1/4 cup chicken broth
  • 4(6ounce) salmon steaks
  • 1 can diced tomatoes w/ Italian herbs
  • 1/3 cup sliced olived ( black or green )

Directions
  1. Heat oil in a large skillet. Add garlic ; saute 30 seconds.
  2. add wine. Bring to a boil
  3. Add salmon. Cover. Reduce heat to a medium; simmer 6 minutes.
  4. Add undrained tomatoes and olives; simmer 2 minutes or until
  5. salmon flakes easily when tested with a fork.
