Brown Rice Cheese And Leeks Recipe

Ingredients
  • 2 leeks
  • 1 large onion
  • 2 cups grated cheddar cheese
  • 1/4 cup cream (to make it lighter, use fat free evaporated milk)
  • 2 Tablespoons butter
  • 1 bunch parsley
  • 1 cup brown rice
  • Parmesan

Directions
  1. Cook brown rice according to package directions (it takes about 1 hour!)
  2. Chop onion, leaks (use the white part), and parsley.
  3. Cook onion and leeks in butter over medium-high heat until the onion and leeks are soft.
  4. Spray an 8x8 dish with cooking spray and preheat oven to 325 degrees.
  5. In the prepared dish, mix the cooked rice, with the onion and leeks.
  6. Add the cream, cheddar, and parsley and mix it all together.
  7. Top with parmesan to create a crust.
  8. Bake for 20 minutes at 325 degrees.
