Lowfat Gluten-free Chocolate Cake

- 1/2 cup cornstarch shopping list
- 1/3 cup potato flour shopping list
- 1/2 cup cocoa shopping list
- 1 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 3/4 tsp. xanthan gum shopping list
- 2/3 cup Splenda shopping list
- 1 egg shopping list
- 3 Tb. unsweetened applesauce shopping list
- 1 tsp. vanilla shopping list
- 1/2 tsp. baking soda shopping list
- 3/4 cup skim milk shopping list
How to make it
- Combine all ingredients except milk.
- Add milk and stir until all lumps are gone.
- Bake in a greased 8-inch pan 25-30 minutes, or until a toothpick comes out clean.
- The middle tends to be doughy so definitely test with a toothpick.
- Ice with your favorite icing, or eat plain. Goes great with low-fat whipped cream, or Creme Fresh :+D
