Lowfat Gluten-free Chocolate Cake Recipe
A lovely chocolate cake for our friends who are on gluten-free diets, this cake tastes great, and is also sugar free, so it's safe for diabetics as well.

Ingredients
  • 1/2 cup cornstarch
  • 1/3 cup potato flour
  • 1/2 cup cocoa
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 tsp. xanthan gum
  • 2/3 cup Splenda
  • 1 egg
  • 3 Tb. unsweetened applesauce
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 3/4 cup skim milk

Directions
  1. Combine all ingredients except milk.
  2. Add milk and stir until all lumps are gone.
  3. Bake in a greased 8-inch pan 25-30 minutes, or until a toothpick comes out clean.
  4. The middle tends to be doughy so definitely test with a toothpick.
  5. Ice with your favorite icing, or eat plain. Goes great with low-fat whipped cream, or Creme Fresh :+D
